You should ask them to send you pdf files or ai files with embeded pictures and fonts in outlines.

!!!??? Preview is a very bad PDF reader ( of the worst that can be found for OS X) and should not be used in a pre-press job, even to simply read PDF... so using it to make PDF is a worst-of-all idea!!!

... especially to make PDF from Illustrator, as Illustrator is able to directly save as PDF, and has absolutely no need of an extra software to output PDF!!!

    But, anyway...:
    - if you output a .AI file from Illustrator, with the default options, this .AI file already contains a PDF... therefore, Preview ignores the Illustrator's datas (which it is not able to understand) and (badly) opens the embedded PDF, that it will (badly) resave as PDF after having butchered everything in...
    - if you output an EPS file from Illustrator, open it with Preview and save it as PDF, again Preview, beeing NOT a PDF distiller, will butcher the EPS to a bad PDF...
... so, in both cases, it's a very bad method, and a very bad advice

Sometimes idiots supply there logos as AI files when really it is just a bitmap saved in an AI file, no vectors at all. I find it is always best to ask for multiple file types if they have them, then you can choose what is best for your workflow.
