I hardly ever use dingbat for my project :D When I do, I usually use them to decorate my presentation or make my e-mail more interesting, like The Meme Font (which has meme....), Ornata B (found it on dafont) and Ride My Bike Dingbat

I would say that the most useful dingbat font for me is MFC Franklin Corners, but it really depends on project I'm working on. More often I use ornament fonts from font families (like Alek Ornaments, Invitation Script Ornaments, etc.)

Mishka Ornaments (of the Misha fonts) is really useful if you need calligraphic ornaments. I use it quite a lot!

I usually use dingbats in Photoshop turning them into shapes. Don't see another usage, at least for me.

Here is a good source for pictograms and other free stuff, sometimes more useful than any dingbat font http://thenounproject.com/?subscribe=True

There are many fonts with extras depending on what you need. For example almost all of the P22 fonts have lovely and detailed extras.

entypo is great, as is modern pictograms.

entypo also has a social one for all the networks that is a nice addition as well.
