    Harlequin RIP

I can't come up with that many reasons to use a PowerPC Mac as a RIP nowadays, and since you are asking for a RIP software for that platform implies that you are making a *new *installation, which narrows down those reasons to strictly economical reasons. Correct me if I'm wrong :-)

So, I would suggest that you install the latest Mac OS X that will work for the G5 (10.5.8), then try to find a Harlequin RIP that will work for PPC (here's example I found: http://www.harlequinrip.com/store/hqnstore.nsf/support/fpdownloads.html ).

Since OS X 10.5 is running on both PPC and older Intel Macs, you can easily make your RIP faster, if needed, by moving your RIP installation's harddrive to a Mac Pro ("Early 2009" and older) probably with a bare minimum of hassle.
